Creamy Avocado Pasta

Yields 2 servings

1 avocado, pitted
1 cup spinach
1 lemon, juiced
2 garlic cloves
1/2 cup pasta water, or more as needed
2 Tbsp parmesan cheese (optional if you are dairy-free)
2 tsp olive oil
2 cups rotini pasta, cooked (can use gluten-free pasta, if you have a wheat sensitivity).

Salt and pepper to taste (optional)

1. In a high-speed blender, combine the avocado, spinach, lemon juice, garlic, pasta water, parmesan cheese, olive oil, and season to taste with salt and pepper. Blend until smooth and creamy, and add additional pasta water to achieve the desired consistency.

2. Ladle over cooked rotini pasta, and serve immediately.

Can serve with chicken to boost protein 😋
